Mellow Garlic Dip

2 whole garlic heads
1tbsp olive oil
4tbsp mayonnaise
4tbsp natural plain yoghurt
1tsp wholegrain mustard
salt & pepper to taste

Brush the heads of garlic with oil, wrap in foil and bake in a 200C oven for 40minutes.
When cool, peel and mash with a sprinkle of salt until pureed.In a bowl, combine garlic, mayonnaise, yoghurt and mustard. Mix well.
Adjust seasoning with salt and pepper. Chill until ready to use.


Tarragon, Walnut & Roquefort – Make as above, but with double the amount of yoghurt. Add 2tbsp chopped tarragon, ¼ cup chopped walnuts and 40g crumbled Roquefort cheese.

Eggplant & Mint – Make as above without the mustard. Finely dice half a small eggplant and fry in olive oil until tender. Once cool fold into dip adding 3 tbsp chopped mint.
