Heb Liqueur


Herb Liqueur

600ml gin or vodka
350g caster sugar
450ml boiling water
1 small orange
thinly peeled rind of 1 lemon
2 cinnamon sticks
1 vanilla pod
4 cardamom pods
5 juniper berries
4 cloves
Pinch tea leaves
4 bay leaves
2 sprigs rosemary
3 sage leaves
2 sprigs thyme
1 tbsp dried elderflowers 1
tbsp dried lemon verbena

First, put all the ingredients except the sugar, water and alcohol into a large, sterilised jar.
Pour on the spirit, making sure all the dry ingredients are covered by alcohol. Cover and leave for one month.
Dissolve sugar in the boiling water and leave to cool. Strain herb mixture into the cool sugar syrup and stir well.
Pour into sterilised jar and leave for another month. Finally, strain through coffee filter or muslin into sterilised bottles and seal tightly.
