Strawberry & Lavender Gin

400g ripe but firm strawberries
175g caster sugar
8 large lavender flowers
750ml gin

Place all the ingredients into a wide mouth jar. Cover with a lid and leave in a dark and (relatively) cool place for 2 weeks.
Gently shake the jar every day. Strain the gin and return liquid to a bottle. Chill for up to 4 months.
Serve over ice or with chilled tonic water. Makes 750mls.
