Immune Boosting Beef Stew

500g lean stewing beef, cubed
4 tbsp flour, seasoned
2 cloves garlic, chopped
3 tbsp extra virgin olive oil
500g mixed vegetables – onion, celery, carrots, broad beans, swede, parsnip – chopped
300ml Guinness
1 bouquet garni (one bay leaf, a sprig each of marjoram, parsley and thyme)
1 tbsp lovage leaves, chopped

In a large casserole, toss the cubed meat in flour, and brown in the olive oil and garlic.
Add the vegetables and stir for two minutes. Add the Guinness, bouquet garni and, if necessary, water to cover.
Bring to the boil. Cover and simmer for 2 1/2 to 3 hours, adding more water if required. 
Stir in the lovage leaves just before serving, and enjoy with some good chunky bread.
