Garlic, Lovage and Apple Dip

Ingredients
2 whole garlic heads
1tbsp chopped lovage
1 peeled and grated dessert apple
1tbsp olive oil
4tbsp mayonnaise
4tbsp natural plain yoghurt
1tsp wholegrain mustard
salt & pepper to taste

Brush the heads of garlic with oil, wrap in foil and bake in a 200C oven for 40minutes. When cool, peel and mash with a sprinkle of salt until pureed. In a bowl, combine garlic, mayonnaise, yoghurt and mustard. Add lovage
and apple. Mix well. Adjust seasoning with salt and pepper. Chill until ready to use.
